Udon has good vegetarian options, and is open on Mondays (according to their website). I can recommend the vegan ramen.

For those who may not have reached Santiago yet, you can find Udon in Burgos and Leon as well. 🌱
Even if you’re not vegetarian, UDON is a great break from the typical Camino fare. Highly recommended.
