Hello!
We are looking at walking for 2 weeks with our 8 year old in October. I'd love some suggestions about where to start (no more than average of 10-15km day
Is late September October ok?
Would we be able to not book accommodation and decide at the time based on 8 year olds perseverance !

You might be okay in your time time frame but be aware the weather will get cooler and rainier as you get into October: https://www.climatestotravel.com/climate/spain/santiago-de-compostela
People typically start from Porto in Portugal, which has a good airport and also good train connections to Lisbon. But since you'll be hiking with an 8 year old, you could also consider starting farther north, perhaps at Caminha on the Spanish border.
As for booking, you can use use services like Camino Ninja, Wise or booking.com to book a few days in advance and cancel if you need to make adjustments. In your case, might want to stay flexible.
 
I'm a slow walker with physical challenges.
I walked from A Guarda to SJC in 2018 in 12 days. Not a drop of rain untl SJC. Be sure to take rest days.
