Hi Aoife, welcome to the forum. You could get the ferry from Rosslare to Roscoff or Cherbourg and then a train from there to Bayonne, from Bayonne its a short hop by train to St. Jean.
Buen Camino.

Hi Aoife, if you travel to Cherbourg you will be getting the train from Paris. Both train journeys, from Roscoff or Cherbourg, will take about eleven hours.

Another alternative would be to travel to Cork and take Brittany Ferries to Roscoff.
The ferry leaves Cork on Saturday to arrive in Roscoff on Sunday morning - 14 hour crossing. Then continue your journey from Roscoff. We use the ferry from Plymouth to Spain and enjoy it.
