Would be my first walking Camino from Baiona to Santiago de Compostela start date March 24, 24 - the trip will be purchased through Camino Ways - I will travel alone (bucket list item so has to be done sooner rather than later), any advice regarding the best flying / connecting travel experience would be greatly appreciated, . I could use starting airport Atlanta or New Orleans.

Are you based in New Orleans? There's an Americans on the Camino Chapter starting up there. Next meeting is this Thursday at 6:30 pm. Several experienced pilgrims will be there happy to provide support and information. I can send the details if you're interested.
 
I think it all depends on whether you have a set schedule to return or not. When I did my first Camino I only booked a one way flight because I wasn’t sure how long it would take me or whether I would walk to Finisterre. Turns out that was smart because I did walk to Finisterre and then I went to visit a Camino friend in London. But for my second Camino I needed to get home on a certain date so I booked a round trip.
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
For my Caminos I fly from Idaho to Paris (stay one night for jet lag) then take a nonstop flight to Biarritz, France. I’ll then catch a quick bus or taxi to Bayonne train station where I hop on board with all the other excited pilgrims going to SJPdP.

You can also take a train from Paris to Bayonne.

Or, you can fly into Madrid, then….

Rome2Rio is a good app for seeing what your options are. Train, bus, flights.

Agree with suggestion to use Rome2Rio to explore your options.
Otherwise - you will get WAAAY too many answers here as everyone of us has his\her preferences on how to do the travel trip
I personally like to fly to Paris, spend a day and take the train from Gare Montparnasse next morning.
coming back (I was in Finisterre so made my way to SdC) I took a train from SdC to Madrid, spent couple of days there and flew home from MAD
Once more - options are GAZILLIONS and you need to figure out what would work best for you, time & money-wise

p.S. its possible that Camino Ways may have some idea as well - I cannot believe they never heard the question. so it may pay to ask them
 
If you depart from ATL there are non-stop flights to MAD. MSY is cheaper but involves a connection (or 2).

I am a big fan of fewer connections...

Compare flight prices on Google Flights then book with the airline you select. Make sure there is plenty of time between connecting flights especially when going through Passport Control in the EU. Once in Madrid or Paris I prefer to take the train (the next day) to the start of my Camino. Buen Camino
