The bus from the airport to Lugo bus station is with a company called Empresa Freire and cost about 10 euro. You need to buy a separate ticket from a company called Monbus for the trip from Lugo bus station to Sarria and this costs about 4 euro. The timetable as of April is below but you can check the latest bus timetables at www.empresafreire.com and www.monbus.es/en I think you may be in time to catch the 16:10. The walk in from the buis station to the old town (Rua Maior) in Sarria where all the albergues are takes about 10 minutes.
I arrive in Santiago with my sister on Sunday 4th September at 15.20hrs - Can anyone advise us the best way to get to Sarria and how long it will take?
Given your arrival time, another option to consider would be the Monbus' bus from downtown Santiago de Compostela to Sarria departing downtown Santiago de Compostela at 18:00. It doesn't run on weekends though so it wouldn't be an option for the user arriving on a Sunday.
To get from the airport to downtown Santiago de Compostela, there's frequent bus service operated by Empresa Freire.
