Of interest is the train diagram

The Schedule that falcon copied is confusing because the website is showing all options ... which appear to include several trains to Ourense or Monforte de Lemos where you wait all day for a train connecting to Sarria.

So my advice for using the Renfe website is to plan trip from Santiago to A Coruna, Ourense, or Monforte de Lemos ... then query the second leg to Sarria ... less confusing.

Note there are buses from Santiago to Lugo ... there are several buses per day from Lugo to Sarria.

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
