Does anybody have any good ideas about secure carparking whilst doing the Vía de la Plata from Sevilla to Merida please?

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
If you want a safe parking for a reasonable price, your best option is probably an airport. Book in advance and if you become a (free) member of Aena you get a 5% discount. So in your case that would probably be Sevilla airport (or Badajoz, but I think public transport will be limited to that airport).

Thank you Luca. I am already checking out the Aeropuerto de Sevilla.
