good day, I arrive may 1 (día de los trabajadores holiday) will pilgrims office, outdoor gear store and some places to eat and or post offices be open ?
Wanna start walk following morning

Pilgrims office yes, as I recall they are open from 7:30 in the morning till midday and then again from 14.00 to at least 20.15. (F, S, Sun until 22.30)
Restaurant's, cafe's and bars will also predominantly all be open.

Outdoor gear store, supermarket, Post office and such like no; as you pointed out it's a public holiday.

...and ship it to Santiago for storage. You pick it up once in Santiago. Service offered by Casa Ivar (we use DHL for transportation).

SJPP is in France. The public holiday is the Fête du Travail :)

The pilgrim office was open when my wife and I were there on 1 May. We got our credencials stamped and set off. I didn't check if anything was open.
