I have read numerous posts on Spanish SIM cards, cheap throw-a-ways and Apps which people enjoy
I am still a bit confused

so if I get a Spanish SIM with a Data plan I can download as if I were at home? call international, email text etc without further charges?
do I still need to stay on airplane mode?

if I use a SIM without a Data plan I can use a wi-fi to communicate with the US?

if I have an app that provided Camino information, is it down loaded to the phone (iphone) and hence no longer utilizing data or web so no further data or wi fi needed> or is GPS required to utilize those fully?

if I Skype does that require a SIM or wi-fi or what? Whats App similar?

I can answer some of this:

First and most importantly you will need an unlocked phone which works in Europe to be able to use a Spanish SIM card. If you don't have that a cheap phone bought upon arrival is the next best solution. In both cases you use the phone exactly as you would at home but your 'home' is now Spain, so bear that in mind when you call your real home.
Skype works fine with Wifi only.

Just in case you don't know the WHATSAP application only uses internet. Many use this to keep in contact with those they meet along the Camino using the free WiFi available in most places. It is widely used by the Spanish. Obviously this texting app would be a text alternative to Skype for contacting home. Note also that Viper is like Skype for voice over internet calling.
