Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
All is a go for my camino. I'm doing Sarria to Santiago then to Finsterre and finally Muxia Oct 16 to Oct 26. Hope to meet some fine folks along the way! Now the hard part...waiting....

You could try filling up the days with regular (top-up) long distance training walks with all your gear.

I suggest a regime of striving towards, before stopping for breakfast:
1) say, 15 km;
2) say, an elevation gain of 400 m.
