Hi Jon-oh Im an Australian too, we just went to see The Way My Way last week and decided to do our 2nd Camino, the last one was 7 yrs ago and our next one is 2024, i just found this forum tonight.
Or just do the old-fashioned thing and go with the flow. Maybe it'll be open, maybe not. In any event neither Hornillos nor Castrojerez are far away, chock-full of accommodation for walkers.

It is currently definitely open. If it isn't by the time you get there though there are a couple of other places that are very unique in a similar way and in the near vicinity.
By all accounts the first week from Irun is often described as some of the most beautiful scenery, but also demanding walking on the Norte. It is a beautiful part of Spain.
