My first thought was the Ingles, because that gives you a "complete" Camino.
But when I read that you are looking for a more religious Camino, my thoughts shifted to the Portugues, from Tui or Vigo, because they would lead you through Padron...

Given what you're looking for I personally would opt for the Camino Inglès, as it seems to fit all of your criteria.

Chiming in on the "replace them" crowd. I usually start wearing my camino trail runners a week or two before i set off to Camino, walk in them, if they have some life left afterwards they get to be my new dog walking shoes.
He can do both, though. Buy the new Hokas for the camino, keep the old ones and after the camino, if either pair still has life in them, he can continue to wear them for shorter walks at home until they wear out.
Well written and fair, you covered all the bases the only things I would add is, when buying shoes make sure the insole is removable . If you have orthotics or custom insoles remember to bring them to the store when fitting new shoes and leave...
