Hoping to do part of the Portuguese route next April from Vigo and I'm wondering if I should book somewhere to stay for my first night as I'll arrive in Vigo around 18:30 or hope to get into a hostel when I get there.

Unless you are a very confident traveller, having a booking for that first night will let you focus on the other things you need to do to get underway the next day. After that, you are in Galicia, and the past couple of times I have walked there, I have used Xunta albergues as often as possible. They cannot be booked, but they were never full. That said, where I have had to use other accommodation, I have booked that.
