Are supermercados or other grocery stores open on Sundays on del Norte? Are restaurants open?
Specifically, I will likely find myself in these towns on Sundays: Castro-Urdiales, Comillas, Muros de Nalon, Abadin (As Paredes), and Santiago. Thanks!

In general restaurants and bars are open, but many grocery stores are not.
I eat neatly all of my meals in bars and restaurants while on the Camino, and I was always able to find somewhere to eat on Sundays on the Norte.

I don't remember specific towns, but we have been caught more than once unable to buy groceries on a Sunday. We have always just stopped when convenient the next day and stocked up then. As @trecile mentions, there has always been a bar or restaurant open, though. We've learned to always keep at least a light snack on hand for occasions such as this and others. We always seem to forget, and it's "oh yeah, we have to wait until tomorrow"...
 
I've found it helps to search on Google Maps for "alimentacion" which will bring up tiny food stores that are often open on Sunday. (They don't always show up when I search for "grocery" or "supermarket".)

We were in Santander this past Sunday and found a China store alimentacion. A first for us. It was Sunday afternoon and we were able to get milk and fruit to go with our muesli.

I live in Castro Urdiales. On Sunday the only grocery stores open are a Carrefour Express on Camino de Ronda and a fruteria/mini-mercado next to the La Barrera bus stop. Both are in the city center. Restaurants, bars and cafes are generally open.
