Portugal is fun, Lisboa or if by the much shorter Porto route-go Coastal! Le Puy is 750K +- to Spain and another 850 on to Santiago and so requires much more time. The Caminho Portugués is lovely, the Vía Podensis0/Chemin-de-Puy is fascinating, is amazingly beautiful, at times is challanging and absolutely my favorite! Conques, Figeac, the Cele Valley, Cahors, Moissac,Aire-sur-l'Adour and Navarrenx - What could go wrong!
If you have the time, the Le Puy route is wonderful. Beautiful little towns, good food/wine, lots of other pilgrims, lots of beautiful chapels & churches, etc.
The Portuguese routes are also very good and worth doing, but the Le Puy stands out for me.
