What do I do with my extra bags?

Plan to Walk Camino (2015)
My cousin and I plan to walk the Camino from Le Puy, and after we finish we are heading to China to teach English. Since we plan on having extra bags, where can I have them safely stored? What do people do when they carry extra bags they don't intend to use along the walk?
