Hi there
Next year May my son and I want to walk the Camino del Salvador. Can someone tell us what kind of weather we can expect from the 5th of May?

As you have already walked six different routes, you know that the weather is unpredictable. The Salvador is a mountain route so that makes it more so. This site will give you "typical" weather for a particular date or month, anywhere on earth - https://weatherspark.com

Try Oviedo and see what comes up.
 
Yes even after 6 caminos I know the weather is unpredictable but because it is a mountain route maybe people know until what month it is not possible to walk because of snow.
 
...and ship it to Santiago for storage. You pick it up once in Santiago. Service offered by Casa Ivar (we use DHL for transportation).
When walking the mountains the weather can change in a split second.
The higher you go the higher the chance of snow. In the Austrian Alpes anyway but I don't know about the Salvador.
 
When i walked the Primtivo in May of 2016, temps were glorious, low 20s or so. I walked with someone wh had just come off the Salvador amd he had still had patches of snow on the ground.

Some years the weather in May is lovely. One year at least that we remember (2013?) there was snow until mid-May which affected the mountain areas around the Caminos.
The only way is to check the weather forecasts nearer the time.

Yup, 2013. Record cold temps in Spain that year in May. It was miserable. Had to buy sleeping bag and gloves in Burgos. Until that year I had been happy with only a liner on the Frances. Never again.
