That is true, but not in 35/40 days. And it must be said that the English have taken ship to Spain rather than France over the ages.

... but if you want to walk from England to Santiago the best choice -- and the shorter one -- is what I propose.

Most pilgrims stopped at the Mount on their way to Santiago de Compostela in northern Spain. They landed at Barfleur, near Cherbourg, walked to the Mount and continued to Santiago."

I hope this new ferry line between St-Nazaire and Gijon (click HERE) will accept soon on board the foot passengers, and therefore the pilgrims to/from Santiago.
