Besides the chants of the Monks of Santo Domingo de Silos, you will hear quite a lot of Gregorian type music on the camino.
A few years ago a group called "Gregorian" produced an albumn "Masters Of Chant". A full-length DVD entitled Masters Of Chant In Santiago De Compostela was made and released in early 2001.Their CD "The Masterpieces" features tracks from Genesis to Eric Clapton's "Tears in Heaven". It is stirring stuff.
Another excellent Gregorian group is Avscvltate who have releasede CD's on Gregorian Chants Love Ballads - Gregorian Chants Rock Anthems - Mystical Chants Rock Ballads - Mystical Chants The Songs Of Queen and my favourite, Songs of Simon and Garfunkel. The Sounds of Silence and Bridge over Troubled Water sounds really good in chant and is great chill out music.
If you like something a bit more lively, you might enjoy the Chieftains CD "Santiago" which is celtic in style with swirling Gaita's (bagpipes) the Trikitixa (box accordian) three stringed 'rabel' and other indigenous instruments.
