Even if you don't find someone in the forum, Tui is a popular starting point for the Portuguese Camino and you will surely find many people to walk with.

May I suggest you take the time to cross the border and visit Valenca, in the Portugal side? the fortress there is very interesting!
 
On the 25th I should be in Pontevedra, so unfortunately I will be ahead of you. But, who knows? We may cross paths in Santiago de Compostela:-)
