In fact, according to Wikipedia, he's from Mieres, which is a town that I enjoyed on the Camino del Salvador.I believe that he's from Asturias.

Wife and daughter.He was friends with the late Anthony Bourdain. They did an episode together in Asturias for the Parts Unknown series and Chef José also contributed to memories of Anthony in a documentary a year or two after he died. Chef José is very involved with the World Central Kitchen which relief feeds people experiencing disaster and crisis as well as supporting those experiencing hardship from the pandemic. The man is a real mensch.
He’s on IG so you can follow his Camino. It looks like he’s walking with his daughters.
