Coeliac (Celiac) on the Camino

On my last year's camino I enjoyed my fill of beautiful bread each day and pasta at night and ate whatever! This year I have been diagnised as coeliac and would like to know if any other coeliac pilgrims managed to eat well on the journey. I don't begin my camino until late october but would like to know if food is available for the gluten free brigade. Might be filling up on oranges and cheese!!
