Camping options Almeria to Grenada?

We are a family of 3 planning to walk Almeria to Grenada next spring. Not sure how far we will cover each day & wondering about carrying our lightweight tent in case we can't reach/find an albergue each night. Between villages would it be possible to discretely wild camp ? I appreciate that wild camping is not encouraged, but some of the days look long with a child, albeit a very good walker.

you may want to post a similar question in the bike section. I've noticed a lot of bicyclist picture posts include what appears to be tents, so they may be a group that uses tents more often than walkers.
I wonder if an alternative would be to use bus or taxi to reach a stopping point, then return the next day to resume (if little legs can't make the entire distance). also, I read that in some provinces it's not that it's not encouraged, but that it is illegal and the civil police patrol in FWD vehicles looking for violators...some wild camping websites included anecdotal complaints of being forced to break camp in the middle of the night after being fined 30-120 Euro. something to consider.
