God willing I'd like to start the Norte this spring with one week from Bordeaux to Irun. I tend to average 25-30 km/day with some elevation changes. Reasonable? Recommended stages?!

Hi Leigh!

There is the route called the Voie Littorale that runs from the mouth of the Gironde River at Soulac Sur Mer (N/W of Bordeaux) to Irun.

Use the search function for Voi Littorale, also check this post out:

Not sure if it can be walked in seven days though!
