At a rough estimate probably 20% asphalt to 80% track. It will depend on the time of year that you are going. If there has been a lot of rain the tracks (especially around Salas / Tineo) can get very muddy and most pilgrims walk on the road. camino-primitivo/topic6274.html
Having just come back from walking the Camino Ingles, maybe others can comment on the provision of blankets in the albergues in Galicia. The cost this year is €5 with disposable sheet and pillow slip provided BUT NO BLANKETS! We took light sleeping bags so were O.K. It would have been chilly without them!
