if one of your daily stamps is from the aubergue (or hotel?) where does the second required stamp come from?

You can get stamps at almost anywhere you might stop - cafes, bars, museums, restaurants, tourist information centres. You'll have no trouble!
 
Go into any bar and buy a coke and ask for a stamp...or if you stop to eat at a cafe ask for a stamp...or if you stop at a cathedral ask for a stamp...or just watch for people selling goods along the Camino and sometimes they have stamps too.

Usually no problem getting stamps on the Frances. Personally I prefer sello in my passport only from places I sleep. A notebook / diary etc is useful for others.

Cafes, bars, information/visitors centers, churches, stores, all you got to do is ask. On our Camino Portuguese a games warden stamped our camino passport.
