Hola - last time I walked the VdlP was in January. I used the accommodation list from the resources section of the Forum and cross referenced with Eroski. Nothing else apart from Wikipedia for local history. Buen Camino. John
The advice about customs isn't quite accurate. I regularly recieve packages in Spain sent from outside Europe, including Australia. The key thing is to be very clear in the customs declaration when posting.
Hola I agree with Sabine. A taxi from Santiago to triacastela will cost 170 euros. An option is bus to Sarria and start from there or taxi further back.

As far as I know you have to appear in person to fill in the form and give your reasons for making the pilgrimage. But email the Pilgrims Office and ask.
But there is no such thing as the "full distance"! People who walk 100 or 1000 kms are still pilgrims and have "completed the Camino".

I think Tom has come up with a good idea but I'm really not sure how viable it is - the route is more challenging and has little infrastructure compared to the Camino Francés. This is something perhaps the local authorities will address in the run up to the next Holy Year.

The Compostela is personal and usually you have to appear in person. He can try but I'm almost certain they won't issue a Compostela to someone who is not there in person.
Hola - the Compostela is personal and you cannot get one for someone else. You can ask the Pilgrims' Office to write a dedication on YOUR compostela to another person, usually dead or unable to make the pilgrimage through illness, but I don't think that's what you are looking for.
