How do you save your iPhone content (Picture & Videos) while on the trail? Last year I bought a thumb-drive that plugged right into my phone and downloaded my content religiously & daily only to have the brand new thing crash on me when I got home. I was devastated.

I have enough memory on my phone, but backup to Dropbox.
I use mobile data and go through about 50-100GB.
but it’s a lot faster than most wifi, and I’d rather not ‘hog’ the wifi.

It was a sorry day that phones stopped being made with micro SD card slots.

I also a tiny SD card reader and backup onto that.
So I have 3 copies. Phone, Dropbox and card.

With an account on Google's Gmail you get 15 GB of free storage for email, photos and other apps. You can pay for more storage. The Google Photos app is what is used to backup to the cloud, by default by wifi but it can be done over a data connection also. Generally Google and Android go together but some apps work with Apple's environment and Photos is one. So maybe store on iCloud and Google's storage in addition and have your photos stored in three locations. Five if you also want to copy them to a flash drive or to an SD card inserted into a USB adapter that acts like a flash drive.

I'm an Android user and to get my files saved to to a flash drive I use an OTG USB driver (where OTG is short for On The Go). Essentially OTG causes the phone to act like the master and what is connected at the other end to act like the slave in other words the phone drives the remote file system. When you hook up a phone to a PC it is the other way around; the phone has the files and PC is in charge of them. Check to see how Apple does this sort of stuff.

While I had enough room on my iPhone 11 - to store my photos - I also used the Polarsteps app which was helpful for commentary about each day and pictures. Sharing this way with friends and family helped them take the journey with me. Eventually I will make a book and download the photos to my laptop.

I don't have an iPhone but I upload my pictures and video all the time to Google Photo. I also brought a thumb drive to back up my phone but don't do that every day. And I make sure to have enough space on the phone so that it is another place to store them.
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.

I used an iphone specific thumb drive for my iPhone XS. But I also installed the Google Photos app on my Iphone which backs up images to my Gmail account. It doesn't back up full-size images but it's something if you lose everything.
 
If you have an iPhone and utilize cloud storage you should be fine as you will likely connect with WiFi in the evening or at cafes (Spain has WiFi everywhere). My phone has 128G and reports around 9G in photos. I have 17000 photos! If you use iCloud most photos on your phone are a thumb nail.
If compelled to store externally you can obtain an adapter that plugs into the phone for your thumb drive. A hassle in my view.
I’ll further note I generally use my T-Mobile phone with my normal plan and seldom pay more than $10 additional over a month in Europe. Utilizing WhatsApp app and WiFi. I sometimes buy an eSIM for just the high speed data for maps, etc. That was 39€ my last trip, much cheaper than adding international to a us plan. My thoughts.
