A late chime in! I walked through Castronovo di Sicilia last November, and except for the first stage, Palermo to Santa Cristina Gela there were no possibilities of on route intermediate stops. I walked past Santa Cristina Gela and stayed an Agrturismo 6k further to shorten the second stage a tiny bit. You certainly could stay in the vicinity of Monreale between Palermo and Santa Cristina, but outside of that the days will run to 20k stretches with nothing but glorious countryside to walk through. Pack lunch and carry lots of water! November was beautiful, dodged all the rain.
