For US pilgrims, I think the numbers will fade as the Baby Boomers age out and the next generations lack the funds and early retirements to make the investment of time and money to take this type of trip. And then the giant travel marketing...

I expect that every morning, there will be pilgrims in your line of sight. From St Jean and definitely from Sarria. (You didn't say where you planned to start.) Here's a late morning example as you leave the road and head from France into Spain...
