For the 36 you could always hang a bag off the back of it if
you need more room. You failed to mention when exactly you are
doing the camino. If it is in the summer, you need less stuff, so
the 36 might work out. The one thing you could do...
Definitely add in days to give yourself a cushion. There's so much that can happen while walking a Camino that can send your plans into the trashcan. You don't want to end up in the position where you need to walk ridiculously long stages or skip...
