WE did the Portuguese in September and had hotel/hostel private rooms booked each night via booking.com, all booked before we left the UK

Go to gronze.com and check the accommodations available in each town. If having your own room is a must, I recommend making a reservation in advance; otherwise, there is no guarantee that a private room will be available.
