Flights from Santiago arrives in a far away gate/ terminal. You better arrive the day before, sleep somewhere near the airport and go to the airport 3 hours before departure.
The Invierno is more popular than the Olvidado. In May or July I'm sure you could expect to see a handful of pilgrims a day on the Invierno — at least that was my experience last June.
Madrid airport is a nightmare. Huge. Give yourself plenty of time. I always stay at the Barcelo which is near the Charmartin train station but there are taxis back and forth at resonable rates.
