Near Santiago, the first places that come to mind are Finisterre/Muxia and A Coruña. But if you want to head to Madrid a bit early, Toledo and Segovia are both very close and great places to visit.
In Australia the closer to departure the more expensive the flight. There is not really such a thing as "last minute". My sister in England has the opposite where flights become cheaper the closer to departure as the airlines want to fill...
