I did the Frances and Portuguese in Hokas - but have felt recently that the toe box is too narrow. I recently switched to Topo Athletic and really like them. The pair I'm using now are the Ultraventures. I'd highly recommend them! -

In 2017 we took a flight from the USA to Biarritz with an interim stop in Europe and caught a shared van to SJPP. We were there in time for a late lunch.

Dry bags are the way to go, more compressible and flexible

Instead of cubes i opted for drybags. Due to the rolltop the are more flexible in terms of volume and with the clip i can hang my stuff of the bedframe most nights. Takes a bit of trial and error to get them into the right shape into your pack...

But why not just use your regular backpack and offload weight into a duffel to send forward? Will you be bringing two backpacks? There will be times that you need to carry everything - to and from the airport at least. It seems that carrying two...

I know that a lot of people do it, but it makes no sense to me to bring two backpacks on the Camino. I don't use bag transfer, but if I did need it for a day or two I would continue to use my well fitted backpack with a good suspension and hip...
