Before 6 am. After joining the Francés from the Primitivo last year where my walking partners and I usually got going between 7 and 7:30 it was quite shocking to wake up to an almost empty albergue at 6:30 on the Francés.

The train operator is RENFE from whom you can buy tickets directly. If you prefer a native English site you can use Trainline. Put either name into a well known search engine and go from there.

That has been my experience, as well. The fastest, direct train offered each day seems to sell out fast, so check often.
