Yes, when we've traveled in the past and for our Camino it's common practice to ask for your name and passport number. As for how to book, we used email, phone and WhatsApp to book directly.
Right side 3 times, left side once...I guess you can figure out which one I like....a bit more treacherous on the right but you follow very close to the water ....may be my favorite stretch on any camino....

Prince Edward Island in Canada has developed an Island Walk, accommodation is possible with shuttles, but is more expensive and a fair but of road walking. People who have done it give rave reviews.
