Please let me advise you tou take a boat from Cadiz to Puerto Santa Maria and avoid the long walk around the bay to get there. It is what pilgrims would have done historically and avoids a tedious stretch around the salt flats.
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
We walked from Cadiz to Sevilla last winter and used la Guia del Camino de Santiago de CADIZ a SEVILLA. It's in Spanish, with sketchy maps but the text gives a lot of information. You can order it at http://www.viaplata.org. BTW Cadiz-Puerto de Santa Maria is a beautiful stretch, esp. when you manage to ignore the tourist traps along the bay area.
