Unfortunately we never went as far as filming it....
I usually swing and flick the thing over the pack then put arms in and wriggle and pull it into position. If it is windy, use the wind to your advantage.
When it stops raining, I unzip, take the arms out and leave it tied under chin, move the sides so they drape over pack away from body, then let the poncho dry in that position, so I never put it into the pack wet.
My Deuter pack has a bottom compartment with zip and I can unzip that and pull out the
Altus without taking the pack off. It is a very fast manner, when it starts raining.
